Green Chia Seed Pudding

Green Chia Seed Pudding

Makes 1 serving
Each serving contains: 2 protein, 1 carbohydrate, 1 vegetable, 1 fat


Ingredients:

  • 1/2 cup light coconut milk, canned
  • 1/2 cup whole milk
  • 1 tsp honey or pure maple syrup
  • 1 cup spinach
  • 3 Tbsp chia seeds
  • 1/2 cup fruit of your choice, or 1/4 cup each of two fruits
  • Sprinkle of unsweetened coconut flakes, optional

Directions:

  1. Add milks, honey and spinach to a blender and blend until very smooth. Then pour into medium bowl.
  2. Add chia seeds. Mix well.
  3. Let sit 15 minutes, or overnight in the refrigerator.
  4. Just before serving, stir again and top with fruit and coconut flakes (if using).
Recipe Notes:
  • Use almond, hemp, flax or oat milk if you prefer, however, coconut milk lends a sweetness that the others do not.
  • If it is too sweet for your tastes, you could use 1/2 cup coconut milk and 1/2 cup of another non-dairy milk, and / or eliminate the honey.
  • Canned coconut milk is preferred but will usually be separated when you open the can. In order to blend before using, shake vigorously in a jar or lidded bowl until coconut cream is no longer separated from coconut water. Then, measure out the amount you are using for the recipe.
