Sweet Potato Breakfast Sandwich

Sweet Potato Breakfast Sandwich

Ingredients:
  • 2 Eggs
  • 1 Cup Grated Sweet Potato
  • 1 Cup Kale or Spinach
  • 1 Tbsp Olive or Coconut Oil
  • ½ Tsp Cumin
  • 1/8 Tsp Paprika
  • 1/8 Tsp Garlic Salt
Directions:
  1. Heat 1 tsp oil on frying pan at medium-low heat.
  2. In a mixing bowl whisk 1 egg. Add in grated sweet potato plus seasonings and 1 tsp oil. Mix well until thoroughly combined.
  3. Place mixture on the frying pan and cook. (Makes 2 sweet potato pancakes, “sandwich buns”).
  4. While pancakes are cooking sauté kale/spinach with 1 tsp oil in another pan on medium heat for 3-5 minutes. Season with salt and pepper to taste.
  5. Fry or scramble remaining egg in the same pan (remove kale/spinach or keep in, it’s up to you).
  6. Place one pancake on plate and top with kale/spinach and egg, top with other pancake.
