Salmon & Asparagus in Foil

Salmon & Asparagus in Foil
Makes 2 servings
Each serving contains: 2 proteins, 0 carbs, 1 veg, 1/2 fat

Ingredients:
  • 12oz Salmon Fillet, cut into two 6 oz pieces
  • 1 tbsp Olive Oil
  • Sea Salt and Pepper to taste
  • 1 tsp Dried Oregano
  • 16-18 Asparagus Spears
  • 2 slices Onion
  • 4 slices of Lemon
  • 1 tsp Fresh Parsley, chopped
Directions:
  1. Preheat oven to 400°
  2. In a medium bowl, place the two pieces of Salmon and pour Olive Oil over them. Sprinkle Salt, Pepper and Dried Oregano over the Salmon to coat.
  3. Cut two sheets of foil big enough to wrap the Salmon and Asparagus.
  4. First place Asparagus (about 8-10) on the sheet of foil. Lay Salmon over the Asparagus
  5. Top each with 2 Onion slices and 2 Lemon slices.
  6. Wrap sides of foil inward over Salmon then fold top and bottom of foil to enclose.
  7. Place foil packets on a baking sheet in a single layer and bake in preheated oven for about 20 minutes.
  8. Unwrap and transfer to plates. Serve warm.
