Ingredients:
- 5 Eggs
- ½ Cup Whole Milk
- 1 Tbsp Dijon Mustard
- 1 Cup Potatoes, cooked and diced
- ¼ Cup Canadian Bacon
- ½ Cup Cheese, grated
- ¼ Cup Red Pepper, finely chopped
- In a bowl, whisk Eggs, Milk and Dijon Mustard. Add Potatoes, Canadian Bacon, half the Cheese and half the Peppers.
- Pour the mixture of Eggs in a greased 9-inch pie plate or 8-inch square pan. Sprinkle with remaining Cheese and Peppers.
- Cook in a preheated oven at 350 degrees for about 20 minutes or until the Eggs are set.
- Broil for about 2 minutes or until Frittata is lightly puffed. Let cool on a rack for about 5 minutes.
- Use a spatula to loosen the edges from the pan and cut into wedges.
