Peppered Frittata

Peppered Frittata

Each serving contains: 2 proteins, 1 carb, 0 veg, 0 fat

Ingredients:
  • 5 Eggs
  • ½ Cup Whole Milk
  • 1 Tbsp Dijon Mustard
  • 1 Cup Potatoes, cooked and diced
  • ¼ Cup Canadian Bacon
  • ½ Cup Cheese, grated
  • ¼ Cup Red Pepper, finely chopped
Directions:
  1. In a bowl, whisk Eggs, Milk and Dijon Mustard. Add Potatoes, Canadian Bacon, half the Cheese and half the Peppers.
  2. Pour the mixture of Eggs in a greased 9-inch pie plate or 8-inch square pan. Sprinkle with remaining Cheese and Peppers.
  3. Cook in a preheated oven at 350 degrees for about 20 minutes or until the Eggs are set.
  4. Broil for about 2 minutes or until Frittata is lightly puffed. Let cool on a rack for about 5 minutes.
  5. Use a spatula to loosen the edges from the pan and cut into wedges.
