Healthy Condensed Cream of Mushroom Soup
This is a healthy alternative to canned Cream of Mushroom Soup and can be used in many recipes.
Makes: 3 cups
Contains: 1 Protein, 1 Carbohydrate, 3 Vegetables, 3 Fat

Recipe Notes: To make soup to eat as part of your meal - add 1 cup of water after step 4

Ingredients:
  • 1 Tbsp butter
  • 3 cups mushrooms, sliced
  • 2 Tbsp onion, chopped
  • 3/4 cup vegetable or chicken broth
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 cup whole milk
  • 1/4 cup unbleached all-purpose flour
  • Sea salt and black pepper
Directions
  1. In a large saucepan over medium-high heat, melt butter. Add onions & mushrooms and cook until tender, about 5 to 7 minutes.
  2. Add in broth, onion powder, and garlic powder and bring to a simmer.
  3. In a small bowl, whisk together milk and flour.
  4. Add milk mixture and cook until soup has thickened, about 1 minute.
  5. Season to taste with sea salt and pepper.
  6. Optional - blend with an immersion blender
