Grilled Fish with Orange Salsa

Grilled Fish with Orange Salsa
Makes 2 servings
Each serving contains: 2 proteins, 1 carb, 0 veg, 1 fat

Ingredients:
  • 1 Navel Orange
  • 1 Green Onion, chopped
  • 1 Tbsp Jalapeno Pepper, minced
  • 2 (6 oz) Fish
  • ½ tsp Sea Salt, or to taste
  • ¼ tsp Black Pepper
  • 2 Tbsp Olive or Avocado Oil
  • 2 tsp Lemon Juice
*Note: You can substitute any other type of fish for this recipe

Directions:
  1. Cut peel and pith from orange with a serrated knife, then cut segments free from membranes. Stir together segments, Green Onion, Jalapeno and sprinkle of Salt in a bowl.
  2. Pat fish dry and sprinkle with remaining Salt and Black Pepper.
  3. Heat large grill pan over medium-high heat until hot. Brush pan with Oil and grill fish until just cooked through, but still juicy (approx. 4 to 5 minutes per side). Sprinkle each piece of fish with 1 tsp of Lemon Juice and place on a plate.
  4. Divide the salsa in half, spoon each half over the one piece of fish and serve!
