Cauliflower Dirty Rice

Cauliflower Dirty Rice

Makes: 6 Servings
Each serving contains: 0 protein, 0 carbs, 1 veg, 0 fat

Ingredients:
  • 2 Tbsp olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, chopped
  • ½ cup celery, diced
  • 1 cup bell pepper, diced (red, orange, yellow, green – your choice)
  • 1-2 Tbsp Cajun seasoning (recipe below)
  • 2 cups vegetable broth
  • 1 bay leaf
  • 4 cups cauliflower, riced
  • Hot sauce, to taste
  • Sea salt & pepper to taste

Directions:
  1. Heat 1 tablespoon oil in a medium skillet over medium heat, and add the onion. Sauté until translucent, then add the Garlic, Celery, and Peppers. Sauté for 15 minutes, until the vegetables are tender.
  2. Stir in 1 Tbsp Cajun Seasoning (start with 1 and then when dish is complete, decide if you would like to add the additional Tbsp – or more if you wish), Broth and Bay Leaf. Reduce heat to low and let simmer 10 minutes.
  3. While the vegetables are cooking, heat the remaining 1 Tbsp Oil over high heat in a large skillet and add the Cauliflower. Cook for 5 minutes, stirring occasionally until it is cooked, but still firm. Remove from heat.
  4. Add the vegetable mixture from the first skillet to the Cauliflower – don’t forget to remove the Bay Leaf. Stir to combine.
  5. Season with Salt & Pepper and Hot Sauce to taste.

GOLO Cajun Seasoning:
  • ½ cup paprika
  • ½ cup Pink Himalayan sea salt
  • ¼ cup garlic powder
  • 2 tbsp. black pepper
  • 2 tbsp. onion powder
  • 1 tbsp. cayenne
  • 2 tbsp. oregano
  • 1 tbsp. thyme
  • Mix all ingredients together and store in an airtight container.
