Applesauce Waffles

Applesauce Waffles
Makes: 8 waffles
Serving size: 1 waffle
Each serving contains: 0 protein, 1 carbohydrate, 0 vegetables, 1 fat

Ingredients:
  • 1 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 1/2 cups whole milk
  • 2 Tbsp butter, melted (for recipe) and 2 tsp butter, melted (to grease waffle iron)
  • 1/2 cup unsweetened applesauce
  • 3 eggs (separate yolks from whites in two separate bowls)
Directions:
  1. Preheat waffle iron. In a bowl, whisk flour, baking powder, cinnamon and sea salt together. Make a well (hole) in the center and drop in milk, melted butter, applesauce and egg yolks. Mix well. Set aside.
  2. In a separate bowl, beat egg whites using a mixer until fluffy and forming stiff peaks. Carefully fold egg whites into batter. Do not over-mix.
  3. Follow your manufacturers instructions with your waffle iron to make the batter into waffles. Use the melted 2 tsp of butter to grease the waffle iron.
  4. Serve with 2 protein portions for a complete breakfast.
Tip: Save and freeze the extra waffles for another time!
