Mediterranean Mac & Cheese

*This recipe only yields 1 protein for each serving. You can choose to double the protein amount or add an additional protein serving to create a 2 protein per serving meal!*
Makes 4 Servings
Each Serving contains: 1 Protein, 1 Carbohydrate, 1 Vegetable, 1/2 Fat

Ingredients:
  • 1 Cup Whole Wheat Elbow Pasta, uncooked
  • 2 tsp Butter
  • 1/4 Cup Red Onion, chopped
  • 1 1/2 Cloves Garlic, minced
  • 2 Tbsp Whole Wheat Flour
  • 1 Cup Whole Milk
  • 1/2 Cup Fresh Mozzarella Cheese, shredded or grated
  • 2 oz Feta Cheese, crumbled
  • 1/4 tsp Dried Oregano
  • 1/4 tsp Dried Thyme
  • Sea Salt and Pepper
  • 1 Cup Grape Tomatoes, quartered
  • 8 Kalamata Olives, pitted and chopped
  • 2 Cups Fresh Spinach, chopped
Directions:
  1. Preheat oven to 375°. Spray an 8x8 baking dish with organic cooking spray.
  2. In a large pot, bring water to a boil and cook the Pasta until just under al dente.
  3. In a separate pot, melt the Butter over medium heat. Add the Red Onions and saute for about 2-3 minutes. Add the Garlic and cook for another minute.
  4. Sprinkle the Flour over top the Garlic and Onions. Mix and cook for another 2 minutes.
  5. Incorporate the Milk and cook until boiling.
  6. Take the pot off the heat and add the Mozzarella Cheese and about 1/3 of the Feta Cheese. Incorporate until most of the Cheese is melted.
  7. Add the Oregano, Thyme, Salt, Pepper, Tomatoes, Olive, Spinach and cooked Pasta. Stir to combine.
  8. Pour everything into the greased baking dish and sprinkle the remaining Feta Cheese on top.
  9. Bake for about 20-25 minutes. The top will be golden brown when finished.
  10. Divide into 4 equal servings.
