Ingredients:
- 1 Cup Whole Wheat Elbow Pasta, uncooked
- 2 tsp Butter
- 1/4 Cup Red Onion, chopped
- 1 1/2 Cloves Garlic, minced
- 2 Tbsp Whole Wheat Flour
- 1 Cup Whole Milk
- 1/2 Cup Fresh Mozzarella Cheese, shredded or grated
- 2 oz Feta Cheese, crumbled
- 1/4 tsp Dried Oregano
- 1/4 tsp Dried Thyme
- Sea Salt and Pepper
- 1 Cup Grape Tomatoes, quartered
- 8 Kalamata Olives, pitted and chopped
- 2 Cups Fresh Spinach, chopped
- Preheat oven to 375°. Spray an 8x8 baking dish with organic cooking spray.
- In a large pot, bring water to a boil and cook the Pasta until just under al dente.
- In a separate pot, melt the Butter over medium heat. Add the Red Onions and saute for about 2-3 minutes. Add the Garlic and cook for another minute.
- Sprinkle the Flour over top the Garlic and Onions. Mix and cook for another 2 minutes.
- Incorporate the Milk and cook until boiling.
- Take the pot off the heat and add the Mozzarella Cheese and about 1/3 of the Feta Cheese. Incorporate until most of the Cheese is melted.
- Add the Oregano, Thyme, Salt, Pepper, Tomatoes, Olive, Spinach and cooked Pasta. Stir to combine.
- Pour everything into the greased baking dish and sprinkle the remaining Feta Cheese on top.
- Bake for about 20-25 minutes. The top will be golden brown when finished.
- Divide into 4 equal servings.
