Holiday Zucchini Bites

Ingredients:

  • 1 ½ Cups Zucchini, raw and finely diced into cubes
  • 1 ¼ Cups Panko Bread Crumbs
  • 1 Clove Garlic, finely diced
  • ¼ Cup Red Pepper, finely diced
  • 3 Eggs, lightly scrambled
  • ¼ Cup Cheese, shredded
  • Salt and Pepper to taste
  • 1 Tbsp Olive Oil, to grease the cookie sheet

Directions:

  1. Preheat oven to 350 degrees.
  2. Place Zucchini, Eggs, Panko, Red Pepper and Cheese into a mixing bowl and stir to combine. Add Sea Salt and Pepper.
  3. The batter should be moist and will come together easily. If it is too moist, add more Panko, 1 tablespoon at a time (do not add more than 4 Tbsp).
  4. Form 15 balls by rolling the batter into your hands. Place Bites onto a greased cookie sheet. They should be the size of a golf ball.
  5. Bake for 20 minutes or until outside is gold and crispy.
Note: These can be made in advance. Store tray with prepared Bites in the refrigerator until ready to bake and serve. Photo Credit: Deb Johnson
