Grilled Cilantro-Lime Chicken with Avocado Salsa

Ingredients:
For the Chicken:
- 4 (6 oz.) Chicken Breasts
- 1 Tbsp Lime Zest
- 1/3 Cup Fresh Lime Juice
- ¼ Cup Olive Oil
- 1 ½ tsp Honey
- 1/3 Cup Cilantro, chopped
- 3 Cloves Garlic, minced
- Salt and Ground Black Pepper
- 1 Cup Avocados (ripe but semi-firm, diced)
- 1 Cup Roma Tomatoes, chopped
- 1/2 Cup Red Onion, chopped
- 1 Clove Garlic, minced
- 1 Tbsp Fresh Lime Juice
- Place chicken on a cutting board, cover with plastic wrap, and pound thicker parts of Chicken into an even thickness. Transfer Chicken to a gallon size resealable plastic bag.
- In a small bowl, combine Lime Zest, Lime Juice, Olive Oil, Honey, Cilantro, 3 Cloves minced Garlic, and season with 1 tsp of Salt and ½ tsp of Pepper.
- Pour marinade over mixture in bag. Seal bag while pressing air out and rub marinate over Chicken. Refrigerate for 2-4 hours, rotating halfway through.
- Preheat a grill to medium high heat (about 425-450 degrees)
- Brush grill with Olive Oil and grill Chicken until center registers 160-165 degrees. Remove and let rest 5 minutes. Discard the remaining marinade.
- For the Salsa: In a medium bowl, toss together Avocado, Tomato, Onion, Garlic and Lime; season with Salt and Pepper. Spoon over Chicken and sprinkle with Cilantro.
