Corn and Zucchini Pasta Salad

Ingredients

  • 1 cup Corn
  • 1 cup Zucchini, chopped
  • 2 cups Grape Tomatoes, halved
  • 3 Garlic Cloves, minced
  • 1 cup Whole Wheat Pasta, cooked (shells, penne, bowties)
  • ¼ Tsp Salt and Pepper
  • 2 Tbsp Olive Oil
  • 2 Tbsp Basil, chopped
  • 2 Tbsp Oregeno, chopped
  • 1 Tbsp Rosemary
Directions:
  1. Heat 1 tbsp olive oil in a large skillet over medium-low heat. Add the corn and zucchini. Cook until the corn is slightly golden and zucchini started to soften. Stir in the garlic and cook for 30 seconds. Transfer mixture into a large bowl.
  2. Add the tomatoes and pasta to the large bowl with the corn and zucchini. Season the mixture with salt, pepper.
  3. In a small bowl whisk 1 tbsp olive oil with basil, oregano, and rosemary. Pour this overtop the pasta and vegetables and toss together until well combined and coated evenly.
  4. This can be serve hot or cold.
