Caprese Balsamic Chicken

Ingredients
  • 2- 5oz Chicken Breasts
  • 2 oz Mozzarella Cheese, divided
  • 1 Tbsp Olive Oil
  • ½ Cup Roma Tomatoes, thinly sliced
  • ½ Tsp Dried Oregano
  • ½ Tsp Dried Basil
  • Sea Salt and Pepper to taste
  • 6 Basil Leaves
  • 2 Cloves Garlic, minced
  • ¼ Cup Balsamic Vinegar
  • ½ Tsp Brown Sugar
Directions
  1. Preheat oven to 350 degrees. Cut ¾ of the way through the chicken breast to create a pocket. Season each breast with salt, pepper, dried oregano and basil.
  2. Fill each breast with 1 oz mozzarella cheese, ¼ cup tomatoes and 3 basil leaves. Seal with toothpicks.
  3. Heat olive oil in large pan, add chicken and cook for about 2-3 minutes on each side or slightly golden.
  4. While chicken is cooking mix together garlic, balsamic vinegar and brown sugar in a small bowl. Incorporate this mixture in with the chicken. Bring to a simmer and allow sauce to thicken.
  5. Transfer chicken and sauce into a baking dish and put into the oven to cook for another 10-15 minutes or until chicken is cooked all the way through and cheese has melted.
  6. Drizzle chicken with juice from the pan and remove toothpicks before serving.
