*This is an appetizer, as such it does not have enough of any food group to count as an entire serving. Enjoy responsibly. :)

Ingredients:

  • 2 Tbsp Olive Oil
  • 2 Sweet Potatoes, sliced into ¼ to ½ inch pieces (use a mandolin if possible)
  • 1 ¼ tsp Sea Salt, divided
  • ¾ tsp Black Pepper
  • 1/3 Cup Cheddar Cheese
  • 2 Avocados, peeled and diced
  • 2 Tbsp Plain Greek Yogurt
  • 1 Tbsp Fresh Lime Juice
  • ½ tsp Smoked Paprika
  • 2 oz Uncured Bacon (2 to 3 slices) cooked and crumbled
  • 3 Tbsp Cilantro, chopped

Directions:

  1. Preheat oven to 400 degrees.
  2. Line 2 rimmed baking sheets with foil. Brush each sheet with ½ Tbsp Olive Oil.
  3. Arrange Sweet Potato slices in a single layer on the sheets and brush with remaining Olive Oil.
  4. Sprinkle with 1 tsp Salt and Pepper. Roast for 20-25 minutes until golden brown underneath. Flip and roast for another 8 minutes.
  5. Remove from oven, sprinkle with Cheese and return to the over to bake for another 3 minutes or until the Cheese is bubbly. Remove from oven to cool.
  6. Meanwhile, combine the Avocado, Yogurt, Lime Juice, ¼ tsp Salt and Smoked Paprika in a small bowl. Mash lightly with a fork. Mixture should be slightly chunky.
