Sweet Potato Skins
Makes: 5 sweet potato skins

Ingredients:
- 2 Tbsp Olive Oil
- 2 Sweet Potatoes, sliced into ¼ to ½ inch pieces (use a mandolin if possible)
- 1 ¼ tsp Sea Salt, divided
- ¾ tsp Black Pepper
- 1/3 Cup Cheddar Cheese
- 2 Avocados, peeled and diced
- 2 Tbsp Plain Greek Yogurt
- 1 Tbsp Fresh Lime Juice
- ½ tsp Smoked Paprika
- 2 oz Uncured Bacon (2 to 3 slices) cooked and crumbled
- 3 Tbsp Cilantro, chopped
Directions:
- Preheat oven to 400 degrees.
- Line 2 rimmed baking sheets with foil. Brush each sheet with ½ Tbsp Olive Oil.
- Arrange Sweet Potato slices in a single layer on the sheets and brush with remaining Olive Oil.
- Sprinkle with 1 tsp Salt and Pepper. Roast for 20-25 minutes until golden brown underneath. Flip and roast for another 8 minutes.
- Remove from oven, sprinkle with Cheese and return to the over to bake for another 3 minutes or until the Cheese is bubbly. Remove from oven to cool.
- Meanwhile, combine the Avocado, Yogurt, Lime Juice, ¼ tsp Salt and Smoked Paprika in a small bowl. Mash lightly with a fork. Mixture should be slightly chunky.
