Spicy Beef and Butternut Squash

Ingredients:
  • 12 oz Beef Chunk Roast
  • 2 Cups Butternut Squash, peeled and cut into 1 ½-inch cubes
  • 1 (14oz) Can Fire-Roasted Diced Tomatoes
  • ¾ Cup Beef Broth
  • ½ Cup Onion
  • 1 (4oz) Can Green Chilies
  • ½ Tbsp Ancho Chile Powder
  • 1 tsp unsweetened Cocoa Powder
  • ½ tsp Cumin
  • ½ tsp Dried Oregano
  • 2 Cloves Garlic, minced
  • Fresh Cilantro, snipped
Directions:
  1. Trim the Beef and cut into 2-inch pieces.
  2. In a slow cooker, stir together Beef, Squash, Tomatoes, Beef Broth, Onions, Chilies, Chile Powder, Cocoa Powder, Cumin, Oregano and Garlic.
  3. Cover and cook on low for 8-10 hours.
  4. Sprinkle each serving with Cilantro.
