Slow Cooker Carnitas

Slow Cooker Carnitas

Serving Size: 3 oz
Each Serving Contains: 1 protein

Ingredients:
  • 3 lb. pork roast
  • 2 Tbsp avocado or olive oil
  • 1 cup yellow onion, sliced
  • 5 garlic cloves, minced
  • 1 cup vegetable broth
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1 Tbsp chili powder
  • 1 Tbsp cumin powder
  • 1 Tbsp dried oregano
  • 1/2 Tbsp sea salt (more to taste)
Instructions:
  1. Trim any additional fat off the pork roast. Dry and rub with the oil, sea salt, chili powder, cumin powder, and dried oregano.
  2. Place the pork in a slow cooker (skin/fat side up), top with the vegetable broth, orange juice, lime juice, onions, and garlic cloves.
  3. Slow cook on low for 10 hours or on high for 7 hours. (All slow cookers and crockpots cook differently! Be aware of how fast or slow your slow cooker or crock pot is cooking).
  4. Pork should be fork tender to shred. Remove from heat and shred using forks or another tool of choice.
  5. If there is a lot of fat, you can skim the top. You can choose to reduce down the remaining liquid or use the liquid when crisping up pork.
  6. To crisp up the pork, you can choose to broil the pork in the oven on a sheet tray or on the stove top with remaining liquid.
