Slow Cooker Bison Stew

Each serving contains: 1 protein, 1 veg, 0 carb, 0 fat

Ingredients:
  • 12 oz London Broil Bison, cut into chunks
  • 2 Cups Vegetable Broth
  • 1 Cup Carrots, roughly chopped
  • 1 Cup Onion, chopped
  • 1 Cup Celery, chopped
  • 1 Cup Mushrooms, chopped
  • 2 Tbsp Whole Wheat Flour
  • ¼ Cup Balsamic Vinegar
  • 1 ½ tsp Honey
  • ½ Tbsp Garlic Powder
  • 1 Bay Leaf (remove after cooking)
  • ½ Tsp Paprika
  • 1 Tbsp Olive Oil
Directions:
  1. Place all of the Vegetables, Spices and ½ Tbsp Olive Oil in a large pot. Cook until Onions begin to get soft; stirring constantly. Once cooked, pour Vegetables into slow cooker.
  2. Return the Pot to the stove and add the Bison along with ½ Tbsp of Olive Oil, Flour, Vinegar and Honey. Cook, stirring constantly until the meat is just browned on the outside.
  3. Add the Bison and the vegetable Broth to the slow cooker.
  4. Cook on low for 8-10 hours.
